What's for Dinner?

Got something on your mind? Get it off your chest! Talk about anything here...well almost anything.

What's for Dinner?

Postby KRSTYSTLCLR on Tue Jan 17, 2012 9:40 pm

I hate it when my kids come home late and say "hey Mom, what's for dinner."

Anyway, I'm kind of tired of the same old thing and was hoping for some new ideas, or just say what you made or had for dinner.

Tonight I made chicken and mole with rice. I cheated on the mole as its almost impossible to get the homemade thing in the U.S. The rice was just simple homemade Mexican style rice with a few veggies.

What did you have for dinner?

That sounds really good.

I made stuffed peppers tonight. I heated up some peppers in the oven and, while that was going on, I cooked some white rice. Then, I zapped the meat sauce I made a couple of days ago. Once the peppers and rice were done, I filled the peppers with the meat sauce and then topped it with the white rice. It was a good dinner; I just wish I made more.

We made a homemade lasagna tonight, we did not have any mushrooms for it though so we put other vegetables in it instead of-- it turned out great, alot for three people. I bought a red wine after work to go with it and some garlic bread. Most of the time at my sister's we order take out, so it is nice to actually cook for a change. :)

Hi Shara,

I LOVE lasagna. I like the Florentine one too. I'v never made one homemade though. :( My other half hates Italian.
But Garlic bread on the other hand is always around my house. It goes with so many meals. Yumm

I'm using the leftover chicken breast meat for chicken sandwiches tonight. Pretty simple.

I made crêpes for breakfast, with strawberry jam and powdered sugar. :D

Lunch will be jalapeño cheeseburgers. :)

And I don't know about dinner. :( Maybe I'll have a tuna steak and a salad.

^ That sounds good Seale,

I haven't had crepes for a long time. I think I have all the ingredients, whats the ratio of milk, eggs and flour? I want to make that this morning. :D

Do you get real tuna steaks or do you get something like Mahi Mahi? I like to cook my Mahi Mahi steaks with garlic, butter and lemon juice. That's another thing I haven't had for a while.

Uhh, I still have left over chicken, so I thought I would make a chicken Caesar salad for lunch.

I use two eggs and half a cup of milk for each cup of flour. :D

And I get real tuna steaks - didn't even know what Mahi Mahi was until you mentioned it. :) I like to cook 'em plain, with just some black pepper and salt. I put it on a layer of mixed salad leaves - lollo rosso, romaine, and rucola - with a dash of garlic dressing and dry red chili flakes. :) It's simple, and tasty - and pretty healthy too. :D

3 nights ago I made pasta with chicken, broccoli, and alfredo sauce (none of the store bought stuff! yucky.)
2 nights ago I made the best chicken enchiladas. I love them. The recipe is so simple, but it takes a while to actually put them together. but they're soooo delish.

Tonight.. :( Well tonight I'll probably order chinese or something cause I don't wanna cook and I have no food in the house unless I do breakfast for dinner.. which I might!

I'v been doing breakfast for dinner a lot lately. Thats the good old way to pinch pennies. My favorite is bacon, eggs, biscuits and gravy. I make my gravy with the bacon grease instead of sausage. Ummm, Im really making myself hungry.

I got an idea from PK. I think I'm going to make sausage with home fried potatoes. Ima fry the potatoes with bits of onion, jalapeno and bacon, and seasoning of course. BBQ the beef sausage with a little BBQ sauce. Yummy :boogie:

Gawd that sounds great, cap. Jealous you can still outdoor Bbq where you live.

Have not had my supper yet... We are prolly going to just order take out Chinese when all get back home. I don't feel like cooking today and guessing my sweetie won't after sports, nor will my friend.
Yesterday I made a baked trout, with yellow beans, asparagus and a potato scallop. I always try to have fish at least once a week, makes me feel happier :)

@Jeff
I lived in NYC a long while ago. I just moved to Seattle last month. It has been snowing a lot. You "guys" can eat so much more and usually dont gain as much weight. I swear I walked by a bakery and smell the food and gain weight. But If I could eat that much I problem would. I just get too full, around 2-3 pieces.

Have you ever tried meatloaf sandwich Jojo? It's pretty good. :eat:

I made a huge pot of homemade chile yesterday. Probably about 4 or 5 gallons of it. There is only a few bowls left for lunch today! I guess everyone liked it. Cost about 15 bucks and everyone had plenty. :cabbagepatch:

I'm making honey ham steaks & pasta salad tonight. I just need a 2nd side dish for it and don't really have any ideas. Maybe baked beans? Hmmm...
