Sandwiches last night. Probably the same tonight with a bowl of fresh fruit salad. Just too hot to use the stove.

Mini Meatloaves ( you cook them in a muffin pan for individual servings)
Mashed Potatoes
Glazed Carrots
Dessert: Pistachio pudding pie

I just started this about a month ago, it makes less mess, they cook faster and they are great for lunches, etc.

We'll have to swap meatloaf recipes, I have about 5-6 different ones.

I'm betting yours are fantastic.........see ya.

motivating myself to actually cook is usually hard for me, so yeah. but the weather has been rainy and cooler lately (a nice relief), which i guess put me in the mood for it.

cornish game hens are pretty easy to cook, though. i just sprinkle a mix of seasonings on it, put a little water on the bottom of the pan, and bake at 375 for about an hour (till the juices run clear).

You can still make one for yourself and have leftovers :)
Cooking for only yourself allows you the opportunity to be adventurous with your seasonings. I know, because I've been there. It was very therapeutic for me to pick a complicated dish. I had to focus on the steps of the recipe so it came out right. It's a good way to divert your thoughts. But to each his own, right?
